Also the highlight reel from the old sketchbook was in the big bundle of images I backed up onto imgur and thus didn't lose, soooo enjoy I guess. People usually like these.

The settings you are thinking of are something else. Disabling them will not prevent M$ from accessing your hard drive whenever they want.

I didn't find anything on the one year limit, but is it really that hard to believe that a pirated copy would end up being limited in some way?

Many articles, however, talk about the fact that an upgraded illegitimate copy of windows 7 will not become a genuine copy.

Actually. /r/windows10 has a comprehensive guide to disable all the options that give them access to your data, trim code that allows them to do so, and alternatives to Windows native programs that handle your data.
