What people often call the rudder is actually called the vertical stabiliser, the rudder is just a small part of that, analogous to an aileron on the wings. The function of the v.stab being to stop the aircraft sliding horizontally while banking or turning. I'm not entirely convinced that aircraft would have sufficient "grip" as it were with those weird slopey stabilisers, and you'd need add pretty big stabilisers to the wing tips to have the same result :p

I just realised yaw control is apparently those tiny flaps on the rear of each engine. I know it's ace combat though but these control surfaces seem very dubious - the way they move doesn't seem to correlate to how the plane moves either.

Yaw control is achived through 2-D thrust vectoring as seen in the video, it had a Yaw thrust vectoring nozzle rather than F-22's 2-D Pitch thrust vectoring
