One of the bigger changes to humans is the lack of caucasian skin colors. Most of this comes from the harshness of space (not a great boon for those who lived in milder climates on earth) , and otherwise was caused by lack of the gene's distribution during the beginning of space travel. There are a few families who are, at the very least similar to, caucasian, but inbreeding is suspected.
Oh, and the stomach acid is different too. It's more effective against inorganic molecules, or what we consider inorganic here.
